Where it comes from
Dealul Vifor · Dobrogea
Aripi is Rasova's barrique range: wines matured in oak, grown on the limestone of Dealul Vifor and polished patiently until they gain wingspan.
In white flies a variety that is rare for Dobrogea, Sémillon, beside Chardonnay. A vibrant expression, exotic for this region, which gives the range the wings in its name.

Tasting notes
A wine with a vibrant, unusual and, for Dobrogea, exotic expression, thanks to the presence of Sémillon alongside the classic Chardonnay. The bright yellow colour with green highlights anticipates the aromatic rush: sweet ripe citrus, orange blossom, honey and green apple, completed by tones of wax, vanilla, exotic spice and hot stone.
The juicy, precise palate evolves gradually, from a full, round attack carried by a tonic grapefruit acidity, through to a fresh, long, intense finish, floral and fruity, with subtle tones of vanilla and almond. A white with very good ageing potential.

Harvest and winemaking
Among the hills we found a parcel of Sémillon, in the area called “Meselic”, where the Chardonnay grapes also come from. The hand-harvested grapes were chilled to 10°C for 12 hours, then sorted, destemmed and macerated before pressing. The Sémillon was vinified in a stainless steel tank and, once fermentation was complete, kept for 3 months on its fine lees. For the Chardonnay, the must was fermented in barriques and the young wine spent 3 months on its lees. The Chardonnay went through malolactic fermentation. Blended and bottled in February 2023.
