The story
Where it comes from
Dealul Vifor · Dobrogea
Sur Mer is the top of the Rasova range: the best parcels on the limestone terraces of Dealul Vifor, where the soil, the Danube breeze and more than 2,100 hours of sun a year give wines with a salty, sea-like minerality.
The fishing net around every bottle isn't a flourish: it's the winery's tribute to the Dobrogea between waters, the place where the vineyard and the sea look at each other.

Tasting notes
It has a delicate onion-skin colour and shows intense, appealing aromas of red apple, raspberry and strawberry, completed by secondary green and citrus notes, with lightly spiced impressions.
The palate is fruity and well drawn, balanced and refreshing, carried by an elegant, precise acidity and a salty minerality. The long, juicy aftertaste brings green apple, raspberry and gooseberry to the front, over a citrus-mineral base. A vibrant rosé, for those who appreciate fruity freshness and mineral elegance.

Harvest and winemaking
The grapes for the rosé are picked and vinified separately. Harvested carefully into small crates, the bunches come into the winery, are held cold overnight and sorted with care. They are processed quickly, cold, under a blanket of inert gas. The must, settled by gravity, is inoculated with selected yeasts and fermented in stainless steel at low temperature. The young wine rests 3 months on its fine lees before the final blend and bottling.
