The story
Where it comes from
Dealul Vifor · Dobrogea
The house dessert is made from the most perfumed varieties of Dobrogea: Muscat Ottonel and Tămâioasă Românească, left on the vine until they concentrate their sweetness.
It comes in a 500 ml bottle, because a good madness is shared in small glasses and finishes too quickly anyway.

Tasting notes
A fresh, perfumed dessert, brimming with floral notes of jasmine, linden and acacia blossom, completed by delicious tones of honey, melon and pineapple. It is light, easy, refreshing and friendly, with a honeyed palate balanced by a citrus acidity of mandarin.
It recalls ripe grapes, lychee, candied apricot and pineapple, with a very fresh green sensation. The aftertaste is long, fruity and delicious, lightly spiced and mineral, enough to make you take another sip.

Harvest and winemaking
The bunches of Muscat Ottonel and Tămâioasă Românească are hand-harvested into small crates and, once at the winery, held cold overnight and sorted with care, berry by berry. The must is clarified, inoculated with selected yeasts and fermented in stainless steel. Once that delicate balance between aroma, alcohol, acidity and residual sugar is reached, fermentation is stopped by lowering the temperature. For 6 months the young wine is kept cold in tank, on its fine lees.
